Without fail, every time I am in the game and I log out through the Esc > Profile > Log Out option, upon logging back in the FOV is reset back to default. The slider itself stays at the spot I set it to (max), but clearly the FOV is on its default preset. A simple switch to a random amount and back to max fixes this however it's still really inconvenient.
