Seems to be 3 types of water groups you can find fish in. 

1st I'll call the great lake, thats' where you find the eels *has the sentiant main body in it. (Have only found common fish here) (long fish here)
2nd are ponds, you find the lung fish here (uncommon) for people wondering. (blobby type fish here)
3rd (ocean/beach/sea) on the very edges of the map, the fishes here on average are worth more then the other 2 places, caught crayfish and sharks here (rare) (used starter bait at sun rise)  

Bait seems to attract rarer fish as well as increase the rate they spawn. 

Common fish seem to have a max weight of 30kg
Uncommon seems to be 40kg

*also i think you can find the gold fish in the puddles, not sure, needs more testing

The biggest fish I've caught yet was 38.1 KG, if anyone has caught bigger let me know, I really hope there is kind of monster out there, like really huge. Rarest of the rare.

Biggest I've caught is a 40kg Lung fish i believe.
