So, I hunt down the thralls, stab them with my parazon, and I've got a chance to see one of the thingies that I need to kill my Lich. Does the game track this anywhere, or am I supposed to remember a symbol that shows up for a couple of seconds in the middle of combat?

The symbol you're seeing after killing thralls is a progress bar. Fill the circle by killing thralls and once it's full, you'll see what requiem mod you need at the end of your next mission.

You can view your requiems in the kuva lich screen accesible in navigation or escape menu.

The murmurs you get increase the progress bar, when the bar is full the requiem will be known.
