How do Advanced Camera Controls work?

I want to enter the current Necramech Showcase contest, but I'm really struggling with the Advanced Camera Controls.

I can't seem to figure out how to get rid of the UI when it's following the path and I don't know how to actually record it. Do I have to use an external program for that, and if so, please recommend me a free one.

About struggling with the Advenced Camera... yea, it's just practice.

About the UI:

This will make sure cameras are not in the UI

Recording it. Yea, it's an external recorder. I personally use the Nvidia Recorder (from Nvidia Experience) but another free recorder, maybe Fraps? It's not all crappy and if BIG files aren't the problem, you should give it a go.
