Hi, I'm looking to build my first Gaming PC but to be honest I've no idea what to do. so I've come to you guys, I would like it to last for a solid 5-7 years with my budget.

my budget is 2500$ (Canadian dollars)

2000$ for the PC and 500$ for the mouse, keyboard and monitor.

Thank you in advance!

You have enough for an amazing gaming computer.

Buy an Intel i7-7700k, a Noctua NH-D14 cooler for it, a GTX 1080 Ti (buy Gigabyte, those are the best ones imo), 16 GB of RAM (I suggest Corsair Vengeance), go for a MSI Intel Z270 Gaming Pro Carbon Motherboard  (that's just my opinion, but you can search on Amazon for a better one), buy an SSD (the disc space doesn't matter much on it, you should use it as a boot drive), an 1TB HDD (go for WD Blue, those are better). Also, a Corsair power supply with 750 W should be enough.

As for the gaming monitor, it's best to buy one with a 144hz refresh rate so you can enjoy your frame rate. The keyboard should be Razer BlackWidow, and you should just get a good wireless gaming mouse for a good experience.
