Ohforf3
Gilding upgrades Zaws and Amps to boost their stats in exchange for rep. You can also give unique names to those items. After gilding the item resets to rank 0 and you will gain MR from re-leveling the item.
Oreades
Right now Gilding seems a bit redundant, since you can't disassemble the Zaw/Amp to reconfigure them after the initial set up. Essentially you need to level it to lvl 30 so you can Gild it so you can level it to 30 for Mastery XP.
Madotsuki
Gilding is DE's excuse for locking basic Zaw functionality behind an extra layer of grind. Basically, upon first building your zaw, it has gimped stats, cannot be customized, cannot install a catalyst and gives no mastery points. You have to grind it up to level 30 and then pay standing and wisps to gild it before it becomes a normal weapon with basic functionality, which also gives you one polarity slot and lets you name it, but also drops it back to rank 0 so you have to max it AGAIN. Now, this MIGHT make sense if you could disassemble a zaw pre-gilding at any point and get your components back to try another composition. But you can't. So... yeah. Works the exact same way with Amps, except since you can't mod amps anyway there's less basic functionality locked behind gilding, because the functionality doesn't exist in the first place.
